I wanted to share this nutritious and delicious recipe with you.
First of all I am inspired like crazy beans to make really good whole quality food every day. Its more of an intent of love to learn all I can about this art. I love it. It brings me joy to serve food that we all love and are inspired by. I bought a bag of Sprouted wild rice & quinoa from Costco the other day, and this is the first dish I made with it. It kind of fell together when my mom gave me Lemon-Thyme from her garden. I like one-bowl wonders, and this is one of them. Jam packed with nutrients and protein from the quinoa and taste. We fell in love. All of us, me Tom and Ella devoured it.
It took me 25 minutes from start to finish and is supremely filling due to the protein in the quinoa and the sprouted grain. Here is how I did it.

Lemon-Thyme Sprouted Wild Rice, Quinoa & Rainbow Vegetables
dice up vegetables, all even sized
1 red pepper
1/4 small purple cabbage
2 medium carrots
1 stock broccoli (almost shave it when you cut it)
1 onion
Spices
4 garlic minced cloves
1 tbsp coconut oil
1 tbsp Lemon-Thyme seasoning
1/2 tsp red chili flakes
salt and pepper to taste
spritz of maggie seasoning or gluten-free tamari
Grain
1 cup wild rice and quinoa blend (If you dont have the blend I would mix 3/4 wild rice and 1/4 cup quinoa)
Directions:
place 1 cup wildrice and quinoa blend in 1 3/4 cups water. Bring to boil, turn down and simmer for about 20 mins and water is absorbed.
Once rice is cooking in the pot,
Sautee onion in coconut oil in big pan, medium to low heat, until translucent
add seasoning soya sauce of choice, stir and wait a few minutes for more caramelization to happen
add lemon thyme, salt, pepper and garlic into onions
As soon as garlic is fragrant add all your diced veg.
Stir and put lid on for about 7 mins. You dont want to over cook veg, you want a little crunch and color.
Once rice mix is cooked, add by big spoonful into the veg mixture.
When it is a desired ratio for your liking....serve and enjoy!
I have a cookbook to come. So many friends and family ask for the recipe after each meal I share. Its easiest to share my recipes and my mind so we all can love food together.
This is what underlays the choice of food in my meals. The one thing I could use less of is sugar, but honestly its just using the right kinds of sugar. Its about loving making meals. Because we all have to eat! We cant just eat fast food or smoothies every meal. I will be sharing about whole and healthy ingredients that make up a whole and healthy kitchen, mind and life.
